Choosing the processor
This is the decision that matters, and it is a $750 spread. All three run the same software; the difference is how much the terminal is doing at once.

Most counters do not need the i5. If the terminal runs one POS application and nothing else, the Celeron will not feel slow, and the difference buys a printer and a scanner instead. Move up when the machine is doing more than selling.
Why a terminal rather than a PC and a monitor
A consumer PC will run the software. What it will not do is survive the counter.
It is one unit, not three. Screen, computer and stand are a single piece of hardware, so there is no tower under the counter collecting dust and no cable loom to snag.
It is built for continuous duty. A retail terminal is specified to run open twelve hours a day, every day. A consumer all-in-one is specified for a few hours of home use, and the difference shows in the fan and the power supply first.
It is supported for years, not months. Consumer models are replaced constantly. A terminal stays available, so a second or third till matches the first.

Pair it with an impact garment tag printer rather than a thermal one — a thermal tag comes back from the press blank — and add a legal-for-trade scale only if you price by the pound.
